Brief of Recipe of West Lake Water Shield Soup
West Lake Water Shield Soup is a famous traditional Hangzhou cuisine. Water shield is a noted Hangzhou West Lake specialty. The soup is sweet in smell, fresh and tender in taste and abundant in nutrients.
175g fresh West Lake water shield 25g cooked ham350ml clear soup10ml cooked chicken oil50g cooked chicken breast2.5g fine salt 2.5g monosodium glutamate
1.Shred chicken breast and ham into 6cm length.
2.Heat a skillet over high heat with 500g water until boiled. Put in water shield.
3.When boiled again, remove and drain the water shield into a soup bowl.
4.Boil clear soup with salt and monosodium glutamate in skillet.
5.Pour the cooked soup on the water shield. Add to shredded chicken breast and ham. Sprinkle cooked chicken oil.
