Brief of Recipe of Pian’erchuan
Pian’erchuan is one of the most famous noodle dish in Hangzhou Kui Yuan Guan Restaurant, dating back to over a hundred year. It is among the top 10 Chinese noodles in 2013. With cheap price and delicious taste, Pian’erchuan has been one of the most popular snacks among local people in Hangzhou. It is characterized by smooth noodle, toothsome bamboo shoots, tender and fresh pork as well as thick and strong seasoned soup.
400g wet noodles60g pickle80g bamboo shoots80g pork loin60g cooking oil3g cooking wine1 teaspoon corn flour1 teaspoon dark soya2 teaspoons salt1/2 teaspoon chicken powder1/2 teaspoon pepper powder5g scallion2 carrot slices
1.Slice pork loin. Mix well with corn flour, salt, 1/2 teaspoon dark soya and cooking wine. Slice bamboo shoots.
2.Cook noodles in boiling water until half done. Remove and rinse with cold water until cold. Set aside.
3.Heat cooking oil in a skillet. Cook sliced pork loin until done. Drain and remove into a bowl. Set aside the cooked oil in the skillet.
4.Cook pickle and bamboo shoots for 1-2 minutes. Pour in a half pot of water. Mix well with salt and dark soya. Heat over high heat until boiled. Transfer to low heat and stew for 10 minutes.
5.Put in noodles and cook to boiling. Combine cooked pork, chicken powder, pepper powder. Remove into a bowl after 1 minute. Sprinkle minced scallion and carrot slices.
