Brief of Southern Song Dingsheng Cake
Dingsheng Cake is a diamond-shaped, reddish fluffy cake which is prepared from rice powder mixed with fruit jam. The inside of the cake is stuffed with red bean paste (a dark red, sweet bean paste), which contributes to the color of the cake. Dingsheng Cake tastes glutinous and sweet.
Dingsheng Cake originated from the Southern Song Dynasty (960–1127), and has been a beloved dessert of Hangzhou local people for hundreds of years. Dingsheng literally means ‘victory’ in English. It’s said that Dingsheng Cake was first made to encourage soldiers of the Yue army, led by General Yue Fei who was renowned for defending the Southern Song against invaders from northern China. Its reddish color symbolizes triumph. Later it was developed into a gift people give to students taking imperial examinations.
